Storing Bulk Cheese

Always looking for ways to save a few bucks, I grabbed one of these 2lb organic monterey jack cheese blocks from Costco. Because we typically spend quite a bit on pricey organic cheese slices, this is a definite money saver….its fast and easy too.

Ideally, I like to break down bulk food buys asap for maximum freshness.

I sliced this 2lb brick into roughly 1/8″ slices. I used our large chef’s knife for this task.

I cut up some unbleached parchment paper to separate the slices. Trying to separate cheese slices that have become molded together makes me twitchy so I’m trying to avoid that at all cost.

Ahhhh…cheese slices so nicely separated.

Sliced, separated, and portioned into Food Saver bags. I vacuumed them just enough to get the air out before sealing. I didn’t want to compress the cheese too much.
